Parmesan – Herb Zucchini (Pinterest find)

Today is my only day off this week and I felt like cooking some comfort food. Mom had found this really tasty looking recipe via Pinterest, According to Elle’s Crusty Parmesan-Herb Zucchini.  It is super easy to make, required very little in prep and clean up and it was full of flavor. I’m looking to incorporate more vegetables into my meals and this was an easy way to do it. I made this along with my fried chicken and creamy roasted garlic mashed potatoes, recipes for both will be posted in the near future. Instructions on my variation of the recipe is below.


Ingredients :

– 4 medium size zucchini
– 1/2 cup grated parmesan
– olive oil
– 2 tbsp dry rosemary
– sea salt
– pepper


Preheat over to 350. Scrub the zucchini then cut off both ends. I cut all 4 in half. Then I cut the half again lengthwise. Get a medium size cookie sheet and cover it with foil. Pour a little olive oil, just a couple of tablespoons, in the foil covered cookie sheet and spread it all over. Place all the zucchini in one layer, cut side up on the sheet. The spread some more olive oil using a brush all over the tops. Next sprinkle the parmesan all over the zucchini, you can choose how heavy you want it covered, 1/2 cup is just a suggestion. Then sprinkle the rosemary all over, just enough to add some flavor, you don’t want to over to it. Finish with a sprinkle of sea salt and pepper to your taste. Place in the oven for 25 minutes then put in the broiler for another 5 minutes to brown the tops.
