Sorry for the lack of posts lately. I’ve been working some double shifts at work and all I can seem to do is sleep lately So without further ado, here is my personal fried chicken recipe. It’s quite simple but for whatever reason everyone loves it. For the chicken in the pictures, I used chicken tenders as they cook a little quicker.
– 1lb of chicken tenders
– 2 cups of canola oil
– 2 cups flour
– seasoned salt
– garlic salt
– sea salt
Put the oil in a deep pan or dutch oven and turn it on medium. You’ll know its ready when you put just a couple of drops of water and it pops. Yes I know the safest way is to test with a thermometer but I learned to cook from my old southern Mama and she never grew up with such a fancy device and so neither do I. Put the chicken in one large bowl or dish and the flour in the other. Generously sprinkle the season salt, garlic salt, sea salt and pepper. Then flip them over and do the same thing. Next take one tender at a time and tip in the flower both sides. Then immediately put it in the hot oil. Repeat with the rest.
It should be done in about 15 minutes. If you don’t have enough oil to cover the chicken you’ll want to turn it over after about 7 minutes to get it good and crispy on both sides. And that’s it. Have a plate with some paper towels on it ready and let the finished chicken cool on the plate for a few minute before serving.
