Here is just a quick little recipe for roasted garlic. I use this a lot in my recipes so I figured I’d made just a quick post so I can link back to it in future recipes.
What ya need:
– a bulb of garlic
– olive oil
– aluminum foil
Preheat the oven to 400 degrees. Strip the bulb of the extra layers down, leaving just the layer that still holds the cloves together. Cut off the top leaving all the little cloves exposed. Smother that sucker in olive oil. I’m not saying drench it but make sure that the whole thing has oil on it. Wrap this in aluminum foil and put it in the oven for 30-40 minutes. You’ll know it’s done when you squeeze it and it’s soft. When it’s done take it out and let it cool about 10 minutes. Opening up the foil the garlic will have a nice golden brown tint to it. Squeeze it out and use it in mashed potatoes or mix it with some melted butter to top on anything from a yummy seafood bake to a french loaf to garnishing a juicy steak. You can even eat it just as it is.
